Simple healthy ice cream made from frozen banana goodness

Chocolate

  • 2 frozen bananas
  • 1 Tablespoon unsweetened cocoa powder
  • 1/4 teaspoon of vanilla

Mint Chip

–  2 frozen bananas

  • 1/4 cup of chopped mint
  • 1/4 cup of dark chocolate chopped

Strawberry

  • 2 frozen bananas
  • 1 cup of strawberries divided

Vanilla Avocado Banana

  • 1 ripe avocado
  • 2 frozen bananas
  • 1 teaspoon vanilla extract
  • 1/2 cup of milk (nut milk, vanilla flavored nut milk, milk, cream, or water)

For all of the above flavors just throw everything in the blender. Store in container in the freezer for a thicker consistency.

For more of a challenge:

Lavender Coconut Ice Cream

  • 1 tablespoons edible lavender flowers
  • 2 bananas, peeled, chopped and frozen
  •  1 cup coconut milk beverage or canned coconut milk

Instructions:

  1. Add coconut milk and lavender to a small saucepan and bring to a boil. Remove from heat and stir thoroughly. Let steep, covered, for 20 – 25 minutes.
  2. Strain mixture, reserving milk and discarding lavender. Pour into a freezer-safe container and freeze for several hours or overnight.
  3. Once frozen, break apart the frozen coconut milk into chunks and add to a food processor. Add the chopped frozen banana. Process until the mixture is smooth and creamy, adding additional sweeteners if desired. This will create a creamy “soft serve.” If you want harder “ice cream,” put the mixture into the freezer for 15 – 20 minutes to harden, then scoop and serve.
